Week 1

- Pineapple Black Bean Burrito with a green salad or cut veggies
- Ultimate Vegetable & Bean Soup with good bread and a small side salad (opt)
- Tariyaki Chickpea Stirfry (add in extra spinach if desired)
Week 2
- African Ground-nut Stew with bread and salad
- Lentil Sloppy Joes with sweet potato fries and steamed peas
- Corn Chowder Quinoa Casserole with steamed broccoli
- Pasta with Chickpea Sauce and a hearty green salad
- Black Bean and Rice Skillet Dinner, over kale/spinach, with chopped veggies on the side
Week 3
- Lentil Soup with corn bread and salad
- Magic Green Lasagna with a cooked carrots and peas
- Sloppy Bobs over sweet potatoes with green beans
- Red Lentil Squash Stew with good bread and a side salad
- Chickpea Ratatouille with steamed broccoli
Week 4
- Black Bean Soup with corn bread and salad
- Maple Baked Lentils with Sweet Potatoes on toast with steamed broccoli
- BBQ'd Tofu with wild rice and roasted balsamic veggies (zucchini, squash, eggplant, etc)
- Lentil, Barley & Mushroom Soup with bread and salad
- Butternut Squash Rice Bowl with peas
